Fukuzushi has stood in Roppongi for more than fifty years. Its history, carried through successive moves, already exceeds a century since the restaurant's founding in 1917.
The new Fukuzushi, inheriting that tradition while evolving with the times, once again sets out to meet the challenge of a new era.
Keeping the essence of the matoi-style ornamentation and crimson handed down through the generations, along with an atmosphere grounded in lustrous black, the master chef and the okami have added a café section and continue to take on new challenges.
There is a spirit the two of them carry forward in an unbroken line. 'We're not a corporation; we're a family business.
A restaurant where you can't see the family's faces is no good -- a member of the household must always be there to greet the guests. Don't leave it to others, and never open branch shops.' (Shigeo, the second-previous master) 'A sushi chef should be an entertainer. The counter is a stage. Sure technique and delicious food go without saying. You want them thinking, ah, I'm glad I came to Fukuzushi, it was delicious.
You have to make them want to come again.' (Joji, the previous master) The guests who gather at Fukuzushi all come back again and again to see the 'familiar-faced' master and okami, who delight them and put them at ease. Many celebrities and business leaders have loved Fukuzushi over the years.
The worldview at its foundation is carried into the new restaurant, and from here a new chapter in Fukuzushi's history begins.
